Lemon Chicken

This week I was hunting for a chicken recipe with ingredients I had lying around and came up with this.  Man was it yummy, and husband approved!  Its basically just chicken cutlets in a lemon/garlic/white wine sauce, but sometimes things just come together perfectly and then I must share the goodness.

Ingredients:

Chicken breasts
1 egg
Italian and panko bread crumbs
2 cloves garlic
1/4 cup white wine
1/4 cup chicken broth
1/2 lemon
2-3 tablespoons butter
olive oil
salt/pepper

Directions:

I sliced my chicken breasts in half lengthwise and pounded them slightly so that we had 4 thin cutlets. Then breaded them with an Italian bread crumb and panko mixture for flavor and texture. Fry the cutlets in a little olive oil until brown and cooked through.  Set the chicken aside, there should be a very small amount of olive oil left.  Add a tablespoon of butter and the chopped garlic cloves to the pan, stir until garlic starts to soften and any remaining bits have come up off the pan.  Pour in wine and broth and bring to a simmer for a few minutes to let the wine reduce.  Squeeze in half a lemon and add in more butter and simmer another minute.  Pour over chicken and dive in.  I served it with (leftover) mashed potatoes and roasted broccoli.  Pretty simple and oh so satisfying!
