Its Sunday and i'm being lazy, so instead of making a big fancy dinner i'm making Linguini with Clams. And as fancy as that may sound, its so easy and so delicious. There are few things in the world that are as good as a big pile of yummy pasta. This is one of those recipes that I pretty much made up, and its not exactly the same each time. Also its super cheap and uses ingredients that I usually have around so its an awesome go to dinner. So really, I mostly just take all the ingredients and throw them in a saute pan as I see fit and then add pasta, so do your thing with all this, but here are some lose guidelines.
Ingredients
Linguini
Garlic
(1) can chopped baby clams
White wine (whatever you like to drink)
Bread crumbs
Oregano/Basil/Parsley
Red pepper flakes (to taste, if you want)
Lemon wedge
Parmesan Cheese
Olive oil/Butter
Salt/Pepper
Directions
Start boiling your pasta.
Put olive oil and minced garlic in a saute pan for a few minutes, add the can of clams, juice and all and let simmer until the garlic and clams sort of look cooked. Then throw in your herbs, fresh or dry whatever you have. I use dry so my measurements are in "shakes" 3-4 shakes oregano, 1-2 shakes parsley, at the moment I have a basil plant i'm trying not to kill so i'll use a few fresh leaves of that, only 1-2, and one shake red pepper flakes, just for a tiny kick. Then I add bread crumbs and cheese. I really have no idea how much, enough to kind of coat the clams and make it suck up all the oil in the pan. Saute for a minute so you don't have that breadcrumby taste, then squeeze a lemon wedge and splash in some wine, also add a tablespoon or two of butter. This is going to be your sauce so make it how you like. Throw a little salt and pepper in there, let it simmer so the alcohol burns off. Then add your pasta straight from the pot into the pan with the sauce. You definitely want some of that pasta water to get into the sauce to make sure it really coats the noodles. Mix the pasta around until the sauce starts to cling to it. Add some more cheese or red pepper flakes or basil to the top and enjoy with a glass of wine! Seriously, yum.
ps. if clams aren't your thing, you can do basically the exact same with with shrimp and make scampi!
