Stuffed Pepper Casserole

A while back we started eating more ground turkey but were getting a little bored with turkey burgers and tacos, so I started looking for easy recipes and realized I forgotten about stuffed peppers!  I made them and while they were delicious, they are kind of hard to eat and the balance of stuffing to pepper is always a little off.  So I thought why not make it a casserole and have the best of everything in each bite!  It has since become a family favorite comfort food that is sort of healthy.  Plus its one of my go to meals for bringing to friends with new babies or making for a large family casual meal.

Ingredients
1 lb ground turkey
2 cups cooked brown rice 
1 onion
2 peppers
2 cloves garlic
1/2 jar tomato sauce 
1/2 cup parmesan
1 cup shredded mozzarella

Directions
Saute diced peppers and onions with garlic until soft, brown turkey, cook rice.  Combine all together with parmesan and tomato sauce in a baking dish, cover with mozzarella cheese.  Bake at 350 for 20/30 minutes until cheese is melted.  

How easy is that?! Its a whole meal in one dish! you can of course have extra veggies or some nice garlic bread on the side.  This is also awesome for lunch the next day!
